Can you tell budding brides and grooms about your services?
I create stylish and contemporary wedding cakes, along with dessert tables for modern couples. I love sugar flowers and elegant clean finishes on cakes.
What is your process from start to finish?
Every wedding cake is different as it very much depends on the style of wedding and what design we are working towards; each decorated cake takes a minimum of four days.
Day 1 – I bake and leave the cakes to cool and firm up.
Day 2 – I’ll cut, layer and fill the cakes with some of my wonderful fillings such as flavoured buttercreams and curds, ensuring the inside of the cake looks as good as the outside. The cakes are then generally covered in a layer of white chocolate ganache to ensure we can get a clean finish to the outside of our cake.
Day 3 – The cakes are iced with a thin layer of sugar paste and left to settle so they can be handled without risk of damaging the icing.
Day 4 – The cakes are stacked and decorated. During this time period I could be creating sugar flowers or working on other design elements for the cakes.
What are your most popular cake requests?
Metallics and blush colours are definitely playing a key part of weddings this season; mixed with sugar flowers they make a winning combination.
What range of flavours do you offer?
I offer a varied range of flavours including Madagascan Vanilla; Blueberry & Lemon; Raspberry & Prosecco; Cherry Bakewell; Chocolate Fudge; Chocolate Salted Caramel.
My most popular flavours are definitely my infamous chocolate fudge cake, while my raspberry and prosecco cake has taken over the standard vanilla choice.
What type of cakes do you offer?
My main focus is wedding cakes, however out of wedding season (primarily April to September) I am able to do celebration cakes and corporate orders.
All my cakes are madeira cake which I find is much more luxurious. I offer both fully decorated wedding cakes and rustic style wedding cakes, such as semi naked and buttercream cakes.
I also create dessert tables and wedding favours to sit alongside your wedding cake, offering items such as brownies, macarons, cookies, truffles etc.
What inspires you when creating new cakes?
I meet with most of my couples and we design a cake for them together; I love it when a couple has put some thought into their cake, drawing on elements of their day such as their flowers, invitations and dress.
I like to stay on top of trends in the wedding industry but prefer to put my own stamp on a design. I am inspired by following all the wonderful wedding professionals we have in the industry including florists and dress designers.
Are there any weddings cakes you have made that stand out In your memory?
I am very lucky to work with some amazing couples and create some beautiful cakes. My most memorable cake to date is a recent six-tier cake adorned with sugar flowers. I needed a step ladder to place the top tiers on and the sugar flowers I created working closely with the couple’s florist.
What trends can you see emerging for wedding cakes
Trends in cakes seem to follow trends in the home, so there is lots of rose gold and blush, and lots of marble cakes. A trend towards bold darker cakes in shades of deep burgundy/ navy and even black seems to be emerging but some couples are not quite brave enough to go with it just yet.
And finally, what’s your favourite thing about your job?
Meeting lots of couples and simply being a small part of their big day.
I feel very honoured to meet lots of wonderful couples, hear all about their plans and create something special for them for such an important day whilst doing something I love.
